产品描述

依据GB/T27342-2009和GB/T12693-2010(2010版2010.12.1实施)乳制品企业低要求:
一、原料:1、生鲜乳收购(两证一单)
①奶蓄养殖场、养殖小区或生鲜乳收购站具有生鲜乳收购许可证;
②运输生鲜乳的车辆具备准运证明;
③有生鲜乳交接单。
2、生鲜乳日供应与企业日加工能力情况及大收奶区域半径的说明

(1) 审核重点内容
★ 受审核方生产资源的充分性、适宜性,包括厂区环境、设施设备、品质管理设备、人员等;
★ 对生鲜乳供应监管的有效性,包括原料基地(自有或协议基地)生鲜乳产量是否与企业产能匹配;采购的原料是否有“两证一单”(生鲜乳收购许可证、准运证和交接单);是否实施驻奶站监管等。
★ 其他原辅料采购过程的有效性;
★ 对生产过程控制的有效性,如杀菌、灭菌、冷藏等关键过程;
★ 产品检验程序的充分性、适宜性,检验活动实施的有效性;
★ 人员健康、卫生控制的有效性;
★ 与食品安全相关法律法规及标准的符合性。

一、乳制品企业GMP认证
1、 认证依据
认监委《乳制品生产企业良好生产规范(GMP)认证实施规则》规定:以GB12693-2003《乳制品企业良好生产规范》作为乳制品企业GMP的认证依据。
GB12693-2003《乳制品企业良好生产规范》是卫生部发布的全文强制性国家标准,所有乳制品生产企业必须遵守和达到其规定。标准规定了乳制品企业在原料采购、加工、包装及储运过程中,关于人员、建筑、设施、设备的设置以及卫生、生产和品质管理应达到的条件和要求。
